Do you have a New Year's resolution that centers around getting healthier in 2016? Most people did, but we know that actually keeping that resolution is far from easy. That's why we want to help! With this quick, easy, and healthy slow cooker recipe, you can create a tomato & wine braised chicken dish so flavorful it will make eating right a snap! As a bonus, it even sneaks in a little bacon!
To make this recipe, you'll need:
In a large skillet, cook the bacon over medium until it's crispy (about 4 minutes). Meanwhile, coarsely chop the canned tomatoes (reserve their juice).
Reserve 2 tablespoons of the bacon fat and discard the rest. Add the fat back into the pan and use it to cook the onions over medium until they get soft.
Add the thyme, fennel, garlic, pepper and bay leaf and stir for one minute. Pour in the wine and let the mixture come to a boil. Boil for 2 minutes, periodically scraping the bottom of your pan. Add in the chopped tomatoes, their juice, and the salt and stir to combine. Take off the heat.
Put your chicken in the slow cooker. Sprinkle with bacon crumbles and pour the tomato mixture over the top. Cover and cook until the chicken is tender (about 3 hours on high, 6 hours on low). Take out the bay leaf, sprinkle with parsley, and enjoy!
