Preheat the oven to 425 degrees F. Slice the top rind off the Brie and hollow a shallow pit out of the top. (Added bonus of a little Brie as a chef's snack!) Line a baking dish with parchment paper and put the Brie in it. Mix the cranberry sauce, vanilla extract, orange zest, brown sugar and nutmeg in a small bowl. Pour the mixture into the shallow of the Brie. Sprinkle the hazelnuts on top and bake for eight minutes.
Check the cheese to see if it is gooey. If not, continue baking until the cheese has softened and the cranberry begins to bubble- up to twelve minutes. When the cheese is ready, transfer it to your serving dish and garnish with a fresh sprig of rosemary. Serve with assorted crackers, but make sure you get a bite. This is one dish that is sure to go quickly!
